Less conventional options make for truly memorable stays—take The Interlude for example. This Coburg lodge is a former maximum-security jail, with renovated cells. A hatted restaurant in North and Common is found in the former mess hall, and a cinema is next door. HOTEL NO is a trendy hotel found on a Flinders Lane rooftop, where the rooms are converted 1970s Airstream trailers.
Staying in the wine regions of Melbourne reveals the typical farm stays and vineyard retreats, but you can also test out converted churches, a steam train carriage, and the Dollywood in Daylesford, Macedon Ranges.
